Armenian Pilaf

Ingredients

  • 4 Tbsp. unsalted butter
  • 3/4 cup of vermicelli pasta or spaghetti pieces broken up in 1-2 inches
  • 1 1/2 cups long-grain white rice, rinsed well
  • 2 1/4 cups low-sodium chicken broth
  • Salt

Instructions

  1. Melt butter in a large saucepan over medium heat.
  2. Add pasta and cook, stirring oftnen, until golden brown and very fragent, about 4 minutes.
  3. Add rice and gently stir to coat in butter.
  4. Add broth and a big pinch of salt, increase heat to medium-high, and bring to a simmer.
  5. Stir once, then cover and reduce heat to low.
  6. Cook until brother is absorbed and rice is tender, 18-20 minutes.
  7. Remove from heat, uncover, and fluff rice gently with a fork.
  8. Cover and let sit 5-10 minutes before serving.
