Ingredients
- 1/3 cup mayonnaise
- 1 tbsp Lemon juice
- 1 teaspoon of minced garlic
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 Artichoke
- 1 tbsp Rosemary
- 1 tbsp Thyme
- 2 tbsp Olive Oil
- 1 tsp Lemon rind
Instructions
- Bring a large pot of water to a boil.
- Peel the stem of the artichoke until you get to the flesh.
- Cut the tip of the artichoke with a sharp knife to remove the thorny tips. Roughly 1 inch.
- Cut the artichoke in half. Rub lemon on the cut parts of the artichoke to prevent discoloration.
- Get some scissors and cut the thorny tips of the leaves.
- Place artichokes into boiling water.
- Let artichokes boil for 15-20 min.
- Once finished cooking let them cool down. Use a teaspoon to carefully scoop out the chokes (the hairy part near the heart).
- Mix olive oil, rosemary, thyme, lemon rind, salt, and pepper.
- Pour the herb oil mixture over cooked artichokes. Make sure to get the herb mixture in between the leaves.
- Get a cast iron (or grill) and place on high. Get the pan really hot.
- Cook artichokes on both sides for 3-4 min each.
- Serve with Lemon Aioli sauce
