Grilled Artichokes

Ingredients

  • 1/3 cup mayonnaise
  • 1 tbsp Lemon juice
  • 1 teaspoon of minced garlic
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 Artichoke
  • 1 tbsp Rosemary
  • 1 tbsp Thyme
  • 2 tbsp Olive Oil
  • 1 tsp Lemon rind

Instructions

  1. Bring a large pot of water to a boil.
  2. Peel the stem of the artichoke until you get to the flesh.
  3. Cut the tip of the artichoke with a sharp knife to remove the thorny tips. Roughly 1 inch.
  4. Cut the artichoke in half. Rub lemon on the cut parts of the artichoke to prevent discoloration.
  5. Get some scissors and cut the thorny tips of the leaves.
  6. Place artichokes into boiling water.
  7. Let artichokes boil for 15-20 min.
  8. Once finished cooking let them cool down. Use a teaspoon to carefully scoop out the chokes (the hairy part near the heart).
  9. Mix olive oil, rosemary, thyme, lemon rind, salt, and pepper.
  10. Pour the herb oil mixture over cooked artichokes. Make sure to get the herb mixture in between the leaves.
  11. Get a cast iron (or grill) and place on high. Get the pan really hot.
  12. Cook artichokes on both sides for 3-4 min each.
  13. Serve with Lemon Aioli sauce
