Mexican Rice

Ingredients

  • 1 cup rice
  • 2 cups of water
  • 4oz tomato sauce
  • 1 garlic clove
  • Small piece of onion
  • 1 1/2 tbs oil
  • 1 1/2 tbs consome de pollo
  • 1 1/3 cup of corn
  • Handful of Cilantro leaves

Instructions

  1. Pour in oil and rice into a pot on high heat. Ensure the rice is coated in the oil.
  2. Move rice constantly while it is toasting the rice. You want the rice to be a light brown color.
  3. Add garlic and onion near the end.
  4. Turn the heat to low and add the water.
  5. Add in the tomato sauce, consome de pollo, and corn.
  6. Mix it all and then put the lid on. Let it cook for about 15 min.
  7. Add in the cilantro and then let it cook for another 10-15 min.
